Using natural materials and traditional techniques, Hugo Byrne makes unique knives that in turn inspire people to cook, create, and experiment. Translating to ‘Eating and place’, Ithe ‘gus Áit is a set of utensils that responds to Ireland’s culinary heritage and its relationship to the natural landscape. The blades have been forge-welded of contrasting laminated steels, whose patterns illustrate how they were made and echo the waves crashing on the Atlantic coast. The handles are made of wood and other materials gathered across Ireland, from salvaged yew and ancient bog oak, to stabilised peat and Atlantic Ocean plastic. Over time, the high carbon steel blades patinate and darken, telling the story of their use and relationship with the user.
